Chicken Biryani is a classic Indian dish that is loved all over the world. It is a rice-based dish that is cooked with spices and chicken. It is a great dish to make for a special occasion or just to enjoy a delicious meal. The key to making a delicious biryani is to use the freshest ingredients and the right spices.


To make the perfect biryani, you will need the following ingredients:


- 2 cups of Basmati rice

- 1/2 kg of chicken, cut into large pieces

- 2 medium onions, finely chopped

- 2 tomatoes, chopped

- 1/2 cup of plain yogurt

- 1 tablespoons of ginger-garlic paste

- 1 teaspoon of cumin seeds

- 2 inch cinnamon, 3 cloves, 2 cardamom, 1 star       

  anise, 1 teaspoon fennel seeds.

- 2 green chilli

- 1 teaspoon of garam masala

- 1 teaspoon of turmeric powder

- 1 teaspoon of red chili powder

- 1 teaspoon of  store bought biriyani masala.

- 2 tablespoons of oil, 1 tablespoon of ghee

- Salt to taste

- handful of mint and coriander leaves.



Instructions: 

( soak the rice and start the process, rice needed to be soaked for 20 to 30 minutes)

1. Heat oil and ghee in a pan and add the spices and seeds. Once they start to crackle, add the chopped onions and sauté them until they turn transparent.

2. Add the ginger-garlic paste and sauté for a few minutes.

3. Add the chopped tomatoes and green chillies and cook for a few more minutes till the tomatoes get soft.

4. Add the garam masala, turmeric powder, red chili powder, biriyani powder, and salt. Mix everything together and cook for a few more minutes. And then add the yogurt.

5. After 2 minutes, Add the chicken pieces, close  and cook for 10 minutes.(stir in between)

6. Add the handful of mint and coriander leaves and mix it well, then add the rice and mix everything together.

7. Add three cups of water and bring the mixture to a boil.

8. If you cook in a pan reduce the heat and cover the pan. Cook for 15-20 minutes or until the rice is cooked.

                                  OR

8. If you cook in a pressure cooker, close the lid in high flame wait for one whistle, and reduce the heat for low for 2 minutes and off the flame.

9. Serve the chicken biryani hot with raita or any other accompaniment of your choice. Enjoy!
